QUINCE JAM

INGREDIENTS:
- 2 kg of quinces apples;
- 2 flat glasses of water;
- 1,2 kg of sugar;
- 2 lemons;
- 5-6 cloves.
PREPARATION:
Wash the quinces apples, deprive them of core and cut them to slices. Boil them with 2 flat glasses of water and, when they will be lukewarm, pass them by the mixer. Pour the dough of quinces apples in a pot, add the sugar, the water of cooking, the juice and the grated peel of 2 lemons, the cloves; bring to boil and, always turning with a wooden spoon, cook on low fire and for about a hour, up to when jam will have dried and it will detach it from the walls of the pot.
Pour it on a plan of marble; level it with a knife and cut it to slide or put it in dice with the shape you like, after having lined them with transparent film.
