The company is one of the companies that founded the association “Capocollo of Martina Franca” representing a type of salami typical of the gastronomic culture of this region. The “Capocollo of Martina Franca” is presided over by Slow Food, and they work together in protecting the quality and originality of this salami.
This precious product is produced using the most delicate part of the pork, fillet, always known for its lean and dry meat . Features that in our work are mitigated by the thin layer of fat that gives it a softness and a unique flavor.
